I’ve decided to cut out excess sugars as best I can, and I’ve said a hard goodbye to many of my favorite desserts and treats. I’ve recently discovered a guiltless-ish way to enjoy banana pudding without the added sugars, and HONEY this cheat was a win!

Ingredients
- 1 3.4oz Box of Sugar Free Pudding
- 1 tbsp Monkfruit Sweetener
- 1 cup Reduced Fat Whipped Cream Cheese
- 1 tsp Vanilla
- 2 cups Zero Sugar Cool Whip
- 3-4 Bananas
- 1 8oz pack Voortman Bakery Sugar Free Shortbread Cookies

Directions
- In a large bowl combine whipped cream cheese, monkfruit sweetener, and a splash of skim milk (approx. 2 tbsp) in a bowl
- Whip these together using spoon or mixer until creamy and clump free
- Add a packet of pudding mix.
- Mix or Blend until you reach a thick pudding consistency
- Fold in as much cool whip needed to achieve your desired consistency, and set aside.
- In a large dish add a single layer of the shortbread cookies, and top with a single layer of sliced banana.
- Cover with half your pudding mixture
- Begin again with a layer of cookies and banana, and then layer the rest of the pudding mixture on top
- Crush remaining shortbread cookie(s) into a crumb coating and sprinkle on top of final pudding layer
- Cover and chill in the fridge for 4-6 hours
- Enjoy!

Pairs well with a warm glass of milk
