Guiltless-ish Banana Pudding

I’ve decided to cut out excess sugars as best I can, and I’ve said a hard goodbye to many of my favorite desserts and treats. I’ve recently discovered a guiltless-ish way to enjoy banana pudding without the added sugars, and HONEY this cheat was a win!

Ingredients

  • 1 3.4oz Box of Sugar Free Pudding
  • 1 tbsp Monkfruit Sweetener
  • 1 cup Reduced Fat Whipped Cream Cheese
  • 1 tsp Vanilla
  • 2 cups Zero Sugar Cool Whip
  • 3-4 Bananas
  • 1 8oz pack Voortman Bakery Sugar Free Shortbread Cookies

Directions

  • In a large bowl combine whipped cream cheese, monkfruit sweetener, and a splash of skim milk (approx. 2 tbsp) in a bowl
  • Whip these together using spoon or mixer until creamy and clump free
  • Add a packet of pudding mix.
  • Mix or Blend until you reach a thick pudding consistency
  • Fold in as much cool whip needed to achieve your desired consistency, and set aside.
  • In a large dish add a single layer of the shortbread cookies, and top with a single layer of sliced banana.
  • Cover with half your pudding mixture
  • Begin again with a layer of cookies and banana, and then layer the rest of the pudding mixture on top
  • Crush remaining shortbread cookie(s) into a crumb coating and sprinkle on top of final pudding layer
  • Cover and chill in the fridge for 4-6 hours
  • Enjoy!
Tip: I used cheesecake pudding mix, but vanilla and banana cream work well too. Also add the vanilla and skim milk.

Pairs well with a warm glass of milk
